Wine Bar Manager

Esplanade pty ltd – South Dunedin, South Island About Piccolo Piccolo is a wine bar and micro bottle shop at the heart of the beachside neighbourhood of St Clair, Dunedin. Since opening in early 2025, Piccolo has become a local go-to for good wine, excellent cocktails, sharp service and delicious Italian-inspired snacks . Our beverage program is central to the identity of Piccolo, supported by clear systems and the backing of an experienced hospitality group. We are looking for a confident and experienced Wine Bar Manager to take ownership of day-to-day service, people and standards as the business continues to grow. About the role This is a senior hands on leadership role where you will: Lead and shape the tone, energy and service of our bar venue Select, train, grow and develop our bar and floor team Have the ability to manage atmosphere, flow and the overall guest experience Oversee bar and bottle shop operations including shaping our beverage offering and stock management Help grow our wine program and bottle shop by introducing wine tastings and events Keep a sharp eye on the numbers, making sure we operate within all our targets Work within clear established systems, with the opportunity to refine and improve them This role suits a creative hospitality leader, with 3+ years experience, who ready to take ownership of atmosphere, service, people and standards while being well supported by an experienced wider team.
